Inspired by nature, Cambium at Careys Manor Hotel is a creative and enchanting dining experience. The name is reflective of their love affair with the New Forest and the desire to showcase the rich natural resources abundant in our local area and the changing nature of the seasons.

Head Chef's innovative menu begins with finding the best regional ingredients and fresh produce, some of which comes from their own kitchen garden. He likes to use local ingredients in a ‘wordly' way reinterpreting classic dishes from around the globe with the flavours of the forest.

As the UK has become a premier wine producing region, Cambium also boasts one of the biggest collections of English wines in the country, featuring vineyards such as Marlings, Exton Park, Nyetimber and Goring.

Breakfast - 7.30am to 10am (weekdays) and 8am to 11am (weekends)

Dinner - 6pm to 9.30pm Tuesday - Saturday

Sunday lunch menu is served between 12.30pm to 2.30pm each Sunday.

Please note: Children must be over the age of 16 to dine at lunch and dinner. A smart/casual dress code is requested at dinner, however, the majority of guests dining at lunchtime will be enjoying a spa experience and are therefore likely to be in their robes.
